Skin Healthy Buckwheat Flaxseed Muffins with Walnuts and Cinnamon

Ingredients:

  • 1 1/2 cup buckwheat flour
  • 1/2 cup  FRESH ground flaxseed
  • 3 eggs
  • 3/4 cup pure maple syrup
  • 1/2 cup milk (you can use dairy or plant-based milk)
  • 1/4 melted coconut oil
  • 1/4 cup collagen powder
  • 2 tsp sea salt
  • 3 teaspoons baking powder
  • 1/2 cup Greek yogurt
  • 1 tablespoon ground cinnamon (adjust to taste)
  • 1/2 tsp nutmeg
  • 1/2 cup chopped walnuts

Instructions:

  1. Preheat your oven to 400°F. Grease the muffin cups with coconut oil.
  2. Grind flaxseeds. 
  3. In a large mixing bowl, whisk together the buckwheat flour, ground flaxseed, salt, cinnamon, nutmeg and baking powder until well combined.
  4. In a separate bowl, beat the eggs until fluffy. Add in the maple syrup, milk, oil, collagen powder, and Greek yogurt, and mix until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. (Be careful not to overmix).
  6. Gently fold in the chopped walnuts until evenly distributed throughout the batter.
  7. Spoon the batter into the prepared muffin tin, filling each muffin cup about 3/4 full.
  8. Bake for a total of 25 min or until the muffins are golden brown and a toothpick inserted into the center comes out clean. Bake at 400 °F for first 5 minutes, then reduce heat to 350 °F for the remainder of the time. (This helps them to get a higher rise).
  9. Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  10. Enjoy your delicious Buckwheat Flaxseed Muffins warm or at room temperature. Store any leftovers in an airtight container for up to 3 days, or freeze for longer storage.
