A few months ago, I picked up a bag of einkorn flour pancake mix and thought, “Oh, this will be a fun way to start the weekend!”
Well, I went to the gym a few hours after breakfast and still felt like I had eaten a brick.
I thought there must be a better way to do this without ruining my whole day after!
Enter buckwheat flour.
I love to bake with buckwheat and have for a long time, but I decided it was time to get serious about creating THE PERFECT buckwheat pancake recipe.
It took months of trial and error and many pancakes that were way too heavy or flavorless, but I think I have figured out the best-ever buckwheat pancake. The flavor and texture are chef's kiss; they don't taste like a boring healthy alternative.
The best part? They don't weigh you down after!
**Plus, they're totally gluten-free if you avoid gluten- a lot of people don't know that about buckwheat!

Buckwheat is an incredible nutrient dense food- I would even call it a skin food because of its glow-worthy benefits.
It's actually not a grain at all, it's the seed of the Fagopyrum esculentum plant, which is related to sorrel and rhubarb.
